Combine carrots, sugar, water, raisins, shortening, salt and spices, and boil 15 minutes, then stir in 1 1/2 tsp. soda and let cool to room temperature. Add dates, nuts that have been mixed with the flour, and vanilla. Bake in heavy skillet or angle food cake pan for 45 to 60 minutes at 350°.
